Easy Elderflower Cordial Recipe
June... and that sweet smell of elderflower on the gentle breeze. I love a summer evening with a glass of elderflower cordial. And homemade is... different. It's fragrant and delicate. And a big hit with my children!
In fact, it's beginning to turn into a bit of a tradition that we go stalking for elderflowers in June! I'm not complaining! Although it does have other uses, the most well known and popular is cordial. I thought I'd share a super simple elderflower cordial recipe so you can join me in making it a tradition! So without further ado, here is my Easy Elderflower Cordial Recipe:
Ingredients:
1 lemon
20-30 heads of elderflower
500g unrefined cane sugar
500ml water
10g citric acid (a natural preservative)
Instructions:
In a pan, heat the water, sugar and citric acid. Let the mixture come to a boil and gently simmer until the sugar gas dissolved.
Meanwhile, chop the lemon and put it into a 1 litre jar with the elderflower heads.
Pour the syrup mixture in the jar.
Let the mixture cool to room temperature and then cover with a lid and leave to infuse for 48 hours.
Strain the mixture through a cheesecloth and funnel into a bottle. Store in the fridge for up to 2 months (if it lasts that long!).
To serve, dilute the cordial with still or sparkling water at a ratio of about 1 part cordial to 5 parts water. Enjoy over ice with a sprig of mint!
