Healthy Peanut Butter Chocolates
These chocolates are the perfect energy boost for busy mums on the go. Full of healthy fats, protein and unrefined sugar, they are not only simple to make but healthy.
These also make great 'new mum' gifts.
So, here are the ingredients for our Healthy Peanut Butter Chocolates:
1/2 Cup Peanut Butter
1/2 Cup Coconut Oil
2 tablespoons cacao (or cocoa) powder
2-3 tablespoons maple syrup
1/2 teaspoon vanilla extract
These are super simple to make:
Just pop all of the ingredients in a pan and mix over a low heat. If you are using raw cacao powder, using a low heat will keep all those healthy enzymes present.
Pour into chocolate moulds. If you don't have a chocolate mould, I have put them into a small baking dish to set and then cut up into small squares before.
Freeze until set. This only takes a couple of hours as you're just waiting for the coconut oil to set.
You can store in the freezer if you prefer them firmer or in the fridge if you like them soft. I prefer freezer but you need to leave them out for a minute before you can bite into them, do experiment!
